{She Cooks} Cheesy Chicken, Rice, and Broccoli Casserole.

Ingredients:

2 bags steam fresh brown rice

1-2 bag steam fresh broccoli {depends how much broccoli you want}

2 cups of cooked, shredded chicken

3 tbsp margarine

salt

pepper

garlic powder

Cheese Sauce:

4 tbsp margarine

1/4 cup flour

2 cups of low sodium chicken broth

1/4 cup Gorgonzola cheese

1/2 cup {ish} Italian cheese mix

2 cup {ish} Mild cheddar cheese {reserve some to top the casserole}

salt

pepper

garlic powder

The nitty gritty:

Preheat the oven to 350.

I took the easy way out with this meal and got the steam fresh bags. They’re easy. I threw each bag into the microwave and let it do it’s thing. Once finished, I put the rice in a bowl with 2 tbsp’s of margarine, garlic, salt, and pepper and mixed it up. This gave the rice some flavor of it’s own. I then did the same thing with the broccoli. Meanwhile I put the chicken in a pot of water and let it boil away until it was cooked through. I then shredded it with a  fork.

Once those three guys were ready I sprayed a 9×13 glass dish with cooking spray and then layered the rice, then chicken, then broccoli in the dish.

I set this aside and made the cheese sauce.

In a medium saucepan, over medium heat melt the 4 tbsp’s of margarine then slowly whisk in the flour to make a roux. Once the margarine and flour are combined, slowly whisk in the chicken broth. Keep whisking until it’s just about to bubble and becomes thick – lower the heat to medium-low to be sure the bottom of the sauce doesn’t scorch  Then whisk in the cheeses and seasoning – whisk until the cheese is completely melted through and the sauce is very thick and creamy.

Then pour the cheese sauce over the rice, chicken, and broccoli. I then lightly stirred the mixture to make sure the sauce was all the way through. Top with the remaining cheddar cheese then throw it in the oven for 25-30 minutes.

I kind of made this recipe up through a combination of different recipes I had pinned on pinterest. I love the creativity in cooking. It makes me happy. 😉

I want a new pair of chestnut colored boots. A new pair of cowboy boots. Sweaters. Patterned skinnies. Some color stay lip color. I’m really digging wearing color on my lips lately but it never seems to stay on long. And I want a lot of black… I’m usually all about color but recently I’ve wanted more neutral tones in my wardrobe.

2. Share a new app that I have recently discovered:

Honestly, I don’t know. I tend to use the same apps – I did recently download Evernote, but I haven’t really used it yet…

3. What is a new fall TV show that has been added to the DVR???

Nashville. I’m obsessed. {I think we’ve been over this… ;)} I think that’s the only new show that I’m completely obsessed with. So good… if you aren’t watching it… start.

I may or may not have just vlogged…

…that sounded weird, and kind of dirty, huh?!

ANYWAYS –  one of my favorite bloggers, Erin from Living in Yellow was co-hosting a vlog series last week… For some reason I couldn’t get my webcam thing to work, so I didn’t get to do it then so I missed the linkup BUT for all of your viewing pleasure… I did it anyways – try to keep your excitement to a minimum. 😉

Things I’ve learned in doing my first vlog… It’s weird to talk into a camera and watch yourself. I make really dumb facial expressions when talking. The sun coming in my window makes me look way pale. Vlog’s are kind of fun to do… after the 5th or 6th take. {I could go on and on about the critiques I made of myself – but who really wants to read that?!}

There you have it kids – you either love me, hate me, or just think I’m a nerd after that. 😉

I’m off to perhaps do something productive with my Saturday, but probably not…

Happy Hour. {First edition}

Once upon a time I met Ellie. I was looking for swag for the Amy Clark Studios grand opening party… so I played on Etsy for a bit looking for local artists/designers that I could get in contact with and hopefully work with them for this event. Among several others, I found Ellie. Ellie creates these kick-ass coasters. They seriously rock – we have them in the studio and use them DAILY! Well, long story short… we met and were instant friends! We came to realize that we had a mutual friend, we are the exact same age {born days apart}, and have so much in common – including our love of blogging.

And due to that last little fact… Happy Hour was born.

Ellie and I got to talking a couple of weeks ago and decided it would be fun to host a weekly blog link up. We brainstormed several ideas… but this one stuck. Every Monday we are going to pick 5 things that are really tickling our fancies. Whatever it may be – it’s what bringing us happiness this week. It’s a moment to reflect on the little things that make us smile. And c’mon – Happy Hour makes ALL of us giddy so we thought it was a perfect title!

1. My new Nike’s. First things first… they have neon {and neon coral at that} on them. But most importantly… they are sooooo much more comfortable than my old shoes. And since I’ve actually been making it a point to workout at least every other day…my feet are now rejoicing!!!

 

2. The 17 Day Diet book – okay, so I haven’t officially started it yet. But the plan is to begin it tomorrow. So I’m hoping that I love it. Or at least like it enough to do it. It doesn’t seem to bad… eating healthy is just a good idea and I think this is the little kick in the bum that I’m needing. {again}.

 

3. Kip Moore. Do I really even need to explain this? Dude is yummy. I’m a sucker for a country singer – but I got the luxury of seeing him in concert last week and I he an amazing performer and very easy on the eyes. I’ve been rockin’ out to his album every chance I get. I was really, really hoping that I could charm him into falling in love with me last week… however, I didn’t get the chance. Damn shame, I tell ya!

 

4. The stack of books sitting next to my bed. I have six books awaiting my attention – and that makes me happy. I love having a book that I’m dying to read – I’m in the middle of two books – but I’m thinking I’m going to start Divergent anyways because I’ve heard such good things about it. Have you read it?? What are you reading right now??

 

5. Summer nights… that are beginning to get a little cooler {just a little} but enough that it lets you know fall is on it’s way. And I don’t know about you, but I’m so ready for fall. I’m a bit over 90 degree days and the humidity. But – the gorgeous colors in a summer evening, those make the warm days a little more worth it, don’t ya think??

This is another one of those posts that have been floating around the bloggy world – and I like them. {Sorry if you don’t!} I think it’s fun to learn about each other – the silly, random, serious, or weird things. This lovely posted it first… then this pretty lady posted it last week… and inspired me.

Do you ever have that moment where you think “Wow, I’m a weirdo?” You do?! Great! 😉 What are some things that you do that are weird?

And then I walked into Target.

I finally settled on a planner – I had my eyes on this adorable one at Barnes & Noble, it had cute little elephants all over it. Totally me. {Because I love elephants, of course. Didn’t know that?! Welp, now ya do!}  But then while I was doing some random shopping at Heaven Target I found this pink planner with lots of lines to write all the things I want to keep track of and… it’s pink. And… it was right next to the new Sharpie pens *gasp* they don’t bleed thru the paper! I may or may not be on cloud 9 with these pens. A Sharpie that doesn’t bleed… dreams are coming true, people.

C’mon I’m not the only one in love with Sharpie’s, right?

Anyways – so planner, check! And stationary – I REALLY don’t need any. I have about a billion different notecard sets… I just need some way of organizing them. {And then hope I actually use them…} I’m still on the lookout for a new bag… I switched everything over to this green and tan bag for the time being {I’m convinced I won’t like it – but, I’m giving it a go… it is cute, just not entirely functional.} And I do actually need new running shoes. My current ones are hurting my tootsies when I workout… I think that’s reason enough to be on the lookout, no?

It’s a much prettier green in real life – not so much Kermit the Frog green.

If you really knew…

I’ve seen this post floating around on the blogosphere – and I thought it was kinda fun. I first saw Stephanie over at Beautiful Mess post it {and her hubs – which was very cute!} and then  Neely over at A Complete Waste of Makeup and my sweet friend Holly over at Running in Stilettos – and so, like all chatty bloggers do – I’m jumping on the bandwagon with this one. My family and friends are my soul.

I’m not a morning person.

I love cats. Like seriously love them. I can fall in love with a cat in 5 seconds. My mom says I need therapy….

I don’t like condiments, whipped cream, or ice cream with my cake.

I’m learning photography and I really enjoy it.

I drink water. All the time. If I’m not drinking that I have a tea from Starbucks – it’s an addiction.  

My mom and I talk on the phone every single day. 

I love cowboy boots – in any way, shape, or form. I want to wear them everyday. With everything. {Hence the name of my blog.;)}

I really, really, really love the beach. And the water. It’s my happy place.

I hate making the bed. It’s one of my least favorite chores in the whole wide world.

I need quiet time. If I don’t have it – I become a brat.

I burp, a lot – I know, it’s not lady like – and believe me, Dad tried to train me better – but he gave up. I accepted it, as should you. 😉

My nails are always painted. I own any color imaginable but always, always need more nail polish. #obsessed

I have a green and pink throw that I’ve had since I was in 3rd grade. It goes on every vacation, every long trip, every move with me. 

Fashion is my one true love. And kittens. 

I love Jack Daniels.

I own being “blonde” and am perfectly okay with being laughed at. 

I absolutely love to cook – being in the kitchen and experimenting with ingredients is relaxing to me. 

I don’t like sports. I will sit and pretend to enjoy them if there is beer involved but aside from that – I just don’t care. 

I love shoes – but I’d rather be barefoot. 

I’ll never read a book twice – my attention span isn’t that long.
